Chicken Hot Pot: Low Fat

This is one of my dishes that takes a while to cook, But is really Healthy. So is a great dish if you spend hours behind your keyboard Gaming.

Here's what you need.
2 boneless chicken breasts each cut into 3 strips.
1 Leek sliced thinly
2 large potatoes sliced as thin as possible.
200g Chestnut mushrooms. Quartered
1 small swede peeled and sliced thinly.
250ml of chicken stock
200g of low fat soft cheese.
Salt and pepper

Here's what to do
Fry the chicken till browned in a little oil. Remove from the pan.
Fry the leek, garlic and mushrooms till soft.
Mix the chicken stock and low fat soft cheese together.

 Put half the chicken in lidded oven proof dish and lay over half of the leek and mushroom mix.
 Lay over half of the potatoes and the swede.
 Then repeat the above 2 steps.
Finish with a layer of potatoes.
Pour over the cheese and stock mixture.

Put the lid on the dish and cook in a preheated oven at 180c for 30 mins. Remove the lid and cook for another 45 mins till the potatoes are browning.
Serve with what ever vegetables you like.
