Pork with Red Wine: ToC Server

I've not had much chance to play Call of Duty 4 recently. So I've pre-made our evening meal for when Maria gets home from work. Which means I can be on our Call of Duty 4 Server 85.236.103.10:28960 for about 6:30pm. We will have this with some mini jacket potato's and Ciabata Bread. This is also a very low fat Meal.

What you will need. (serves 2) Just double the quantity's for more people.
175g diced lean pork.
1 onion chopped
200g chopped tom's
75ml Red wine
1/2 teaspoon tom purée
75ml of chicken stock
1-2 courgettes in thick slices
125g chestnut mushrooms halved
1tsp of dried mixed herbs
1tsp of chopped fresh sage. (from my herb garden) Use half if you've' only got dried.
1tsp of cornflour mixed with 1/2tsp water.
Salt and Pepper.

Here's what to do.
Dry fry the pork with the onion for 5mins
Stir in the Tom's, wine, purée, stock, courgette and mushrooms. And all the herbs.
Bring to a boil and simmer for 20min's..
Stir in the cornflour paste.
Simmer uncovered for a few minutes to thicken the sauce.
Season to taste
