This is another very easy recipe to prepare and cook. I've made mine this morning and will reheat them for dinner this evening. I will be having mine with my
Special Fried Rice.
Here's what you need2 thick slices white bread, crusts removed, about 100g (4 oz)
250g (9 oz) peeled raw prawns
1 green or red chilli, finely chopped
2.5cm (1 inch) piece fresh root ginger, finely chopped
4 garlic cloves, finely chopped
1 tablespoon chopped fresh coriander
1 teaspoon salt
1 egg
vegetable oil for frying
And here's what to do.
1. Place the bread in a bowl, cover with water, soak for about 10
seconds, then squeeze out the excess water. Place the drained
bread in a food processor with the prawns, chilli, ginger, garlic,
coriander, salt, and egg. Pulse until well blended.
2. Heat the oil and shallow-fry spoonfuls of the mixture for 2-3
minutes on each side until puffed and golden brown. Drain on kitchen
paper and serve warm.
