Prawn Curry:ToC Thai Style

This has got to be one of the easiest, tastiest, healthiest meals I've ever cooked. And fits well into ToC's  Gaming Munchies.Takes a few minutes to prepare and about 15-20 minutes to cook.

Here's what you need. (serves 2)
1 400ml tin of coconut milk
2tbsp of Red Thai curry paste.
1 1/2 Red chilli. One diced the other halve in very thin strips
Juice of half a lime.
1tsp of sugar.
1/2tsp of salt
1tbsp of Fish Sauce.
250 of raw king prawns de-veined and shelled.
A few coriander leaves.
About 20 cherry tomato's

Here's what to do
1. Heat half the coconut milk in a wok or frying pan. When it starts to boil add the curry paste. Simmer for 10 minutes.
2. Add the sugar, salt and fish sauce and the remaining coconut milk. Simmer for 5 minutes.
3. Add the diced chilli, prawns and cherry tomato's and simmer for 5 minutes. Make sure the prawns have turned a nice pink colour. 
4. Serve with the thin strips of chilli, coriander and a squeeze of lime juice on each bowl.
I added a tea spoon of corn flour at the end to thicken the sauce.

We had ours with Naan Bread. But this would be nice with Jasmine Rice.
