Gaming Munchies Return
After quite a break from Posting my Recipe's, what with the hassle that goes into moving house. And the fact i bought a very duff PC from Dell. You will be glad to know i'am back to Blogging. For those who have followed my previous Gaming Munchies i will still be keeping my Recipe's nice and easy. So to kick of again, here is Roast Veg Pasta. I made this, this afternoon to keep me going through a evenings gaming of CoD4 on The ToC Server Call of Duty 4 Server - 85.236.103.10:28960.

Roast Veg Pasta
For the sauce you will need:
1 Onion Diced
Olive oil (Tablespoon)
1 Tin of Chopped Tomato
2 Tbs of Red wine vinegar.

For the Roast Veg
you will need:
1 Aubergine (Diced)
2 Cougettes
(Diced)
10 Mushrooms
1 Red onion (cut into chunks)
Full head of garlick (in cloves)

How to do it.
Put all the veg in a roasting tin. Drizzle with Olive Oil and put into a medium oven for about 90mins. In the meantime. Slowly fry of (sweat) the onion in olive oil for about 20 mins. But don't allow it to brown. Add the red wine vinegar and reduce by half. Add the tin of chopped Toms and reduce by a third. That is the sauce done. Easy peasy!! Stick with Soggy. Allow the sauce to cool.
When the Veg is roasted squeeze out the garlick from the cloves into the tom sauce. Mix in all the other Roasted Veg (but go nice and easy) Thats the Roasted Veg done. Now cook some pasta as per the instructions on the packet. No i don't make fresh!!! I used ASDA Fussili. When the pasta is cooked mix with the Roasted Veg and Serve. Scrummy!!!
