Gaming Munchies: Banana oat bars.

I made these yesterday before going to watch Sheffield United. A great Low fat, high energy, easy to make snack bar. Also very good for quick easy snack's whilst gaming. Try making some if you have an evening of Call of Duty 4 planned.

Banana oat bars.

low fat spray (veg oil will do)
100g porridge oats
2 tblsp granulated artificial sweetener. (I used normal granulated Sugar).
1/2 tsp cream tartar (Don't confuse this with tartar sauce)
1/2 tsp ground cinnamon
3 ripe bananas mashed
2 medium eggs, separated
150g low fat plain yogurt

*Preheat oven to gas mark 4/180/fan oven 160
*Lightly grease a 20cm (8inch) sq cake tin with spray and line with baking parchment
*Reserve 1tblsp of oats then whiz the rest to a powder in food processor.
*Mix with sweetener, cream of tartar & cinnamon, then add mashed bananas, egg yolks and yoghurt
*In separate bowl whisk egg whites to soft peaks.
*Stir in spoonful of banana oat batter to loosen it then carefully fold in remainder
*Pour into the prepared tin and scatter with reserved oats
*Bake on the centre shelf of the oven for 30min until firm and springy. Cool in tin, set on wire rack.
*Cut into ten slices and store in airtight container or wrap individual bars in cling film and freeze.
